Where did you grow up and where have you traveled to that has helped inspire and shape your cooking philosophy? 

I grew up in Denver, Colorado. I focus on the concept and idea of regional cuisine as a continuation of what it means to source local. Colorado and the United States are young, culinarily speaking and our ingredients and traditions still have the ability to shape our cuisine. To me that’s an exciting idea!

I’m a competitive snowboarder and lifelong skateboarder.

Tell us about your absolute favorite food and why readers should try it if they haven’t already. 

Green Chile—I believe Green Chile is a natural source of super concentrated Umami and prepared into a sauce and stew can showcase a sense of place as great as any dish can from anywhere.

What are three ingredients that you simply couldn’t live without? 

Palisade Colorado Produce: Plums, Peaches, Peppers—as well as Olathe Sweet Corn, Bow & Arrow Blue Corn, Organic Colorado Beef and Fruition Cheeses.

We love the art behind plating. What do you love about designing the perfect dish? 

Designing dishes and plating to me is a conversation. Understanding the who and why of what came before in dish creation and style, the relevance and deliberate statement in how we plate is all part of a greater conversation about food. Plating is an art, but also its a statement of vision and interpretation of something that has been done before. None of us are exploring unchartered territory, but creating and plating a dish allows us the ability to speak our one dialect of the larger culinary lexicon.

Tell us about one of the most creative dishes you’ve created?

Colorado Elk and Smoked Beet Tartare with Huitlacoche Hoisin, Umeboshi style Elephant Heart Plum and Puffed Beef Tendon.

What do you love about being Executive Chef at Bin 707 Foodbar and Tacoparty in Pagosa Springs, Colorado?

I love the ability to create and execute a vision and help guide and teach others to do the same. Bin 707 Foodbar and Tacoparty are intended to provide a sense of place through the food of Colorado’s Grand Valley. Our food isn’t a personal expression, rather in context to our region and ingredients to help further define “Colorado, Southwestern and Mountain cuisine."
